Avocado Boats 

Prep Time: 15 minutes
Yields: 8


Ingredients
1 cup Farro, cooked 
2 small cucumbers, diced
1 red pepper, diced 
1 yellow pepper, diced
2 scallions, chopped 
1/4 cup basil packed, chopped 
1/2 half cup pine nuts 

Dressing: 
Lemon, olive oil, red wine vinegar, salt and pepper 


Directions

  1. Mix all ingredients well then add dressing. Serve chilled. 

  2. You can also serve it in grilled avocado boats. Simply cut avocado in half then brush with olive oil and sprinkle with salt then grill for a few minutes. Once grilled, fill with salad. So delicious!
