4th of July Berry Spinach Salad

Prep Time: 15 minutes
Yields: 8 servings


Ingredients

5 cups Baby spinach 

2 cups strawberries, cut twice length wise

2 cup blueberries

1 cup walnuts, toasted

1/2 cup crumbled goat cheese


Dressing:

1/2 cup red onion, finely chopped 

1/4 cup olive oil

2 tablespoons balsamic vinegar

Juice of one lemon

Salt and pepper


Directions
1. Make dressing by combining all ingredient in a jar then shaking well.

2. Combine all ingredients in a bowl.

3. Add dressing and mix well
