Birthday Cake 

 

Prep Time: 10 minutes
Cooking Time:  20 minutes
Yields: 8 -10 servings


Ingredients
½ cup coconut, avocado or olive oil
½  cup coconut sugar
4 eggs
1 tsp vanilla
1 cup almond flour
2 tsp baking powder


Directions

  1. Pre-heat oven to 350 degrees

  2. Cream together wet ingredients; eggs, coconut oil, coconut sugar and vanilla

  3. Add almond flour and baking powder. Mix well.

  4. Pour into a greased cake pan and bake for 20 minutes. Use toothpick to check if ready. 

 

Frosting: 

Ingredients:

 

5 oz Chèvre Goat Cheese 

1/4 cup Pure Maple Syrup 

1/8 tsp vanilla 

Directions: 

Whip all ingredients well using a whisk attachment or stand. Chill for 30 minutes, then spread on cake and tip with your favorite fruit.
