Chocolate Chip Cookies 

 

Prep Time: 10 minutes
Cooking Time: 15 minutes
Yields:10-15 servings


Ingredients

1 cup almond meal 

1 cup old fashioned oats

1/3 cup flaxseed, meal

1/2 cup chocolate chips - I use dark chocolate or semi sweetened chips 

2 eggs

1/4 cup coconut sugar

1/4 cup coconut oil, melted

1 teaspoon vanilla 


Directions

  1. Pre-heat oven to 350 F. then line cookie sheet with parchment paper. 

  2. Cream together coconut sugar, melted coconut oil, vanilla and eggs. 

  3. Add dry ingredients except for chocolate chips and mix well. 

  4. Add chocolate chips and mix well by hand. 

  5. For large cookies, divide batter into 10 equal portions and roll into balls. For smaller cookies, divide batter into 15 equal portions and roll into balls. Place balls on cookie sheet and flatten with fork.

  6. Bake for 15 minutes then allow to completley cool before serving.
