
Easy Breakfast Eggs

Prep Notes: This recipe was inspired by a conversation I had with a friend of mine, NTZ. She uses this technique to prepare breakfast for her three kids, each gets to choose his own toppings and everyone is happy! Just Awesome!

Yields: 6
Ingredients
12 eggs (to your preference, I used 2 per cup)
6 tsp ground flax seeds, one teaspoon per cup
Salt/pepper
Grass fed butter - to grease pan
Toppings: Diced avocado, diced tomato, diced green bell-pepper, zucchini, chopped spinach, chopped basil, chopped broccoli, diced cheese and any other veggie you like!

Preheat oven to 350 degrees.

Grease muffin pan (big size) with butter.

Crack 1-2 eggs per cup and mix well. Add salt and pepper, then add flax seed meal and mix. Add toppings and cook for 30 minutes until cooked well.

Let cool and store in an airtight container for up to one week.
Notes: Same recipe can be used to make a full plate Frittata... perfect for Brunch! My favorite combinations are onion and mushroom, broccoli and cheddar, or tomato/avocado basil... the options are endless!
