2 cups oatmeal
1/4 cup maple syrup
1/2 cup cooked or canned pumpkin
1 cup pumpkin seeds
1 teaspoon of pumpkin pie spice
dash of salt
1 teaspoon of vanilla essence
2 tablespoons coconut oil
1/2 cup dried fruit (optional)
1. Preheat oven to 350F.
2. Mix all ingredients well.
3. Line a cookie sheet with parchmant paper then spread mixture evenly
4. Bake until golden, about 20 to 25 minutes, stirring once halfway. The granola will further crisp up as it cools.
5. Let the granola cool completely, undisturbed, before breaking it into pieces. Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months.
Note: I personally like using fruit in season so I prefer to use fresh fruit over dry fruit when eating it with yogurt or milk.
