Real Food Ferrero Rocher

Yields: 16

1 cup roasted hazelnut nuts

1/4 roasted hazelnut, roughly chopped for rolling

1/2 roasted hazelnut, whole for the middle of the ball 
1 cup pitted majdool dates
1/2 cup raw cacao powder


  1. Place dates in a mug and add hot water, just enough to cover it. Soak for 10 minutes.

  2. While dates are soaking grind roasted hazelnuts in small batches in a food processor until smooth, 1/4 cup at a time. Move ground nuts to a separate bowl.

  3. Place dates (discard the water) in the food processes and pulse until smooth.

  4. Add raw cacao and ground hazelnuts to the date mixture and blend in the food processor until smooth and well blended, (3-5 minutes). Refrigerate for 30 minutes. 

  5. Use damp hands to roll the mixture into equal size balls, about 1 tablespoon each. Flatten the ball and place one whole hazelnut in the middle then roll again. Once shaped into a ball roll I, pressing firmly,  into the chopped hazelnut mixture to coat it. Freeze for at least 2 hours before serving. For best results keep frozen. 

  6. Place in airtight container and freeze for up to 2 months.
