No birthday is complete without cake!
Yesterday was my son’s two year birthday, this year I knew I couldn’t get away with another fruit cake so I made a decision to make the healthiest, most nutritious, birthday cake ever!! Last year, for his first birthday I made an amazing all strawberry cake that my son devoured during a cake smash shot by my very talented friend Sara Sultan, see more of her amazing work on her website. Fast forward to this year, I researched endlessly to find the perfect balance for a nutritious cake but to no avail. So I decided to create my own recipe and it turned out delicious plus it was jam packed with all the good stuff!! Ingredients: 1.5 cup whole grain flour 2 tsp baking powder 1 1/2 tsp cinnamon 1 cup shredded carrots 1 cup shredded zucchini 1/2 cup walnut, crushed 6 Tbsp coconut oil 3 Eggs 1/2 cup coconut sugar (optional) 1/2 cup milk 1 tsp vanilla essence 1/4 tsp salt Directions: Preheat oven to 350 degrees Grease pan with coconut oil and let sit. Mix wet ingredients (Eggs, sugar, coconut oil, milk and vanilla) then add carrots and zucchini mix well. Add dry ingredient and mix. Spread batter into cake pan and bake at 350 degrees for 30 minutes or until a wooden tooth pick inserted in the center comes out clean. Cool completely. Frosting: 1 can full fat coconut cream (Trader Joes brand works really well) Refrigerated for at least 24 hours. Keep upright and do not shake to encourage separation of cream and liquid. The next day, chill a stainless steel mixing bowl for about 10 minutes. Remove coconut cream from fridge and discard the liquid, or use in another recipe. Place the hardened cream in the bowl and beat for 1-2 minutes until creamy. Voila, coconut frosting done! My son loves trucks so I thought it would be the perfect cake idea... so for his cake I used a bread tin, for the truck body, and a mini muffin tray, for the wheels, then pieced it all together. For frosting color I used a couple of dashes of Turmeric and it worked like a charm for a pale yellow color with no added flavor, adding only it's healing powers to combat inflammation. Then I improvised the decoration process as you can see it’s way outside the box... grape tomato headlights, a carrot windshield and kiwi wheels. It was a hit!!!!
