Yields: 15 cookies
1 ½ cups almond flour
1 cup unsweetened, dried coconut- get it here
½ cup ground flax seeds, get it here
1 cup pumpkin seeds, get it here
½ cup chopped dried figs (no sugar added), get it here
1 tsp. baking powder
2 average-sized bananas, ripe
1 tsp. vanilla
¼ tsp. salt
1. Preheat oven to 350F.
2. Beat egg with vanilla and bananas in a small bowl.
3. In a large bowl, combine all dry ingredients.
4. Pour egg mixture into dry mixture and stir to combine.
5. Drop 1 tablespoon at a time onto lined baking sheet. Flatten cookies with fork. Bake for 20 minutes

Variations: You can substitute dried figs with dark chocolate chips for a chocolate fix!
