
Watermelon Salad
Prep Time: 15 minutes
Prep Notes: Add blueberries for a healthy festive 4th of July side dish!
Ingredients
5 cups watermelon, cubed
1/2 cup red onion, finely chopped
1/4 cup mint (packed), finely chopped
1 cup feta, cubed
1/2 cup Blueberries (optional)
Dressing: Balsamic vinegar, olive oil, juice of one lemon, salt and pepper
Directions
1. Combine all ingredients in a bowl except blueberries.
2. Add dressing and mix well
3. Once done, sprinkle blueberries on top.
